Chocolate Waffle Cookies from Larue County Kitchens -- Kentucky. (submitted by Bonnie R.)

2 squares chocolate or 6 Tbsp. cocoa (I use cocoa) and 1/2 cup butter (or coconut oil)
Melt together and cool. (Often I melt it on a low setting in the microwave. I've tried to go directly to the next step without letting it cool and found it didn't work as well as when it did cool.)
2 eggs 1 tsp. vanilla
3/4 cup sugar 1 cup flour
Beat eggs. Add sugar, vanilla and flour. Then add chocolate mixture. Drop by teaspoons on waffle iron and bake about one minute. (On a medium setting it takes about 90 seconds. Generally the first batch -4 cookies- will be somewhat burned--it just happens that way. : ) Cookies will be fragile. Lift up and out with two forks.) Makes about 30 cookies. (My waffle iron does not need any spray to keep cookies from sticking.)
Ice with the following:
1 stick butter 1 box powered sugar (Don't know how much this is. Icing shouldn't be runny)
3 Tbsp. cocoa 1 tsp. vanilla
6 Tbsp. milk or cream
Heat over low flame. (Or in microwave on low setting.) Do not boil. Add powdered sugar and vanilla. Spread on cookies and top with a pecan. (Or walnut) This is enough icing for a double batch of cookies.
It works well on a waffle iron with a small grid--not sure how cooking on a big grid would work.
Only makes 4 cookies at a time.

Butter Horns (Dinner Rolls) from Amish-Country Cookbook (submitted by Bonnie R.)

Mix together:
1 pkg. yeast
1 T. sugar
Beat in 3 eggs with 1-c. warm water. Let stand 15 min.
Add:
1/2 c. sugar 1/2 t. salt
1/2 c. shortening 5 c. flour ( I replace up to half with a combination of whole wheat, cornmeal, oatmeal, etc.)
(I don't use shortening anymore. I used coconut oil which is very healthy for you. : ) Also I would try butter)
Knead well. Let stand in refrigerator overnight. Divide in 2 parts and roll out in 12-in. circle. Cut into 16 wedges. Roll up starting with wide side. Let rise 3-4 hours. Bake at 400 degrees for 15 min. (I always use a lower setting and check before 15 min.) Brush with butter. Serve while warm.

I really like this recipe for Sunday if you're having someone over after church. You make the dough the night before. Roll out in the morning and put rolls on pans. Then whenever you get home from church (sometimes I'm gone well over 4 hours) you warm your oven and bake them. Hot, fresh, homemade rolls but all the work is done by that point.

 

Cowboy Caviar

1 can black beans
1 can pinto beans
1 can shoepeg corn
4 green onions (chopped)
1 jalapeno pepper (seeded and chopped)
1 green pepper (diced)
2 cloves garlic (minced)
2 tomatoes (diced)
1 small bottle Zesty Italian dressing
Mix all ingredients and refrigerate. Serve with chips.

Sweet Potato Casserole

3 cups sweet potatoes (fresh or canned)
1 stick margarine or butter
1 cup sugar
2 eggs
1 cup milk
1 tsp vanilla

Topping Ingredients
1/3 cup flour
1/2 stick butter
1 cup brown sugar

Cook and mash potatoes (or mashed canned potatoes). Add butter, sugar, eggs,
milk, and vanilla. Place in casserole dish. Sprinkle with topping. Bake at
350 degrees for 45 min. 

 

Cheese Wild Rice Soup

2 cans cream of potato soup
2 cups shredded American cheese
1 small onion, chopped and sauted
9 slices bacon, cooked and crumbled (I use bacon bits) or diced ham
1 1/2 cups cooked Uncle Ben's instant wild rice mix
2 pints half and half (you can substitute half milk, if desired)

Prepare Uncle Ben's rice per package instructions, then add remaining ingredients and allow to thicken slightly.  Serve with a salad and rolls or bread.

(This recipe can be doubled for a large group and items such as shrimp or broccoli can be added if desired.)
Bean with Bacon Soup

1 Can of Bean with Bacon Soup
(Family Size is Good)

Add water to desired thickness.

Heat in small to medium pan on stove until nice and warm. Let simmer for some time allowing beans to become kinda mushy.

Flavor with pepper as desired. Serve in bowl.
Yummy.

 

    Recipe for Happiness

2 heaping cups of patience
2 handfuls of generosity
1 heart full of love
  a dash of laughter
1 head full of understanding

Sprinkle generously with kindness; add plenty of faith; mix well; spread  over a lifetime.  Serve to everyone you meet.

 

Elephant Stew
(submitted by Pastor Kenny)

1 medium elephant
brown gravy
salt and pepper to taste
2 rabbits (optional)
Cut elephant into bite-size pieces. This will take about 2 months. Add enough brown gravy to cover. Cook over an open fire for about 4 weeks at 465 degrees. This will serve about 3,860 people.
