how to latch a general purpose dpdt relay?

Put one set of normally open contacts (i.e., normally open + common on one side of the relay) in parallel with a momentary-contact switch that provides current to the relay’s coil. Use the other set of normally open contacts to switch current to the fan motor. That way, even after the momentary-contact switch is opened, the relay will have closed the normally open contacts, and the first set of those contacts will continue to allow current to flow to the relay’s coil, keeping it latched, while the second set of those contacts will keep current flowing to the fan motor. You can add a normally-closed switch that momentarily opens in series with the first set of normally open contacts to allow yourself to unlatch the relay by stopping the flow of current to the coil.
